Intense cocoa muffin without added sugar

Chocolate muffins without added sugar

Like many of us during the Covid-19 lockdown, I turned to cook and baking. I’m not a natural Cook. In fact, I usually feel I don’t have time to do things in the kitchen and I’m known for walking away from the hob and leave things to burn. However, these past few weeks, things have changed a bit. I have cooked and baked a lot more and the crazy thing is, I no longer hate the whole thing. I’ve always admired my sister-in-law and mother-in-law in New-Zealand for their abilities to make muffins, scones, and other delicious things while we were sipping a cup of tea. They made it so easy… So now that I had a new-found love for cooking, I wanted to try a few recipes that Mila would love without them being a total sugar bomb. These intense cocoa muffins without added sugar were perfect. I highly recommend eating these muffins warm with a bit of yogurt. If you don’t want to be tempted, just keep a couple out and freeze the …

Ham, cheese & yogurt muffins with St Helen's Farm

Ham, cheese & yogurt muffins with St Helen’s Farm

Since I’m on a detox sugar to avoid eating refined sugars (#week 9), I have been trying to find delicious, healthy recipes to keep me on the right track while enjoying my food. This ham, cheese, goats milk yogurt muffin recipe has been a major success in our household! It is exactly what you need to make healthy snacks for your children or if you are traveling and want to avoid eating all the junk food on the road. The original recipe was initially with wheat flour and cows milk yogurt but since I do not tolerate gluten and I find goats milk easier to digest than cows milk, I swapped both respectively for buckwheat flour and St Helen’s Farm goats milk yogurt which we have been using since Mila was little. The health benefits of goats’ milk Steve was the one who introduced me to the benefits of goats milk Vs cows milk when I stopped nursing Mila thirteen years ago. He has always been interested in health and well-being and as the son of a kiwi …

easy, peasy chocolate brownie by Lily & Mila. Read on www.karinecandicekog.com

The easiest chocolate brownie you will find

This is one of the easiest chocolate brownie recipes you will ever make! Mila and Lily made this chocolate brownie during half term all by themselves. My only contribution was to put it in the oven. I love when kids bake on holidays, don’t you!? It’s a good way to keep them busy, teach them something useful while having fun and on top of it, you get to have some cake to eat afterwards. The girls ‘ chocolate brownie is incredibly easy to make (only 15 minutes preparation!) and it tastes DE-LI-CIOUS! As I’m intolerant to gluten (I ballooned like a whale!), we used gluten-free flour to make this chocolate brownie so I could have a little slice but you can use normal flour if you wish. For this chocolate brownie, you will need: 200g cooking chocolate 3 eggs 2 cups of sugar, about 200g 1 cup of rice flour (gluten-free), about 100 g 150g butter Instructions: Pre-heat the oven to 180ºC / 350ºF  In a bowl, mix the eggs with the sugar In a saucepan, melt slowly the …

Mila’s homemade pikelets

As some of you know, we are a franco-kiwi family and while we are not spending as much time in New-Zealand as we do in France, we’ve always made a point of teaching Mila to be a freewi and to embrace both nationalities and cultures. She was doing the Haka at the age of 3 and the same way I taught her how to make crèpes (pancakes), Steve taught her how to make pikelets which she made yesterday and again this morning and they are delicious!!

The Boyfriend jeans look | Outfit perfection

One look I absolutely love wearing at weekends, is the combo: boyfriend jeans + white shirt. It’s casual but add a pair of stilettos, a pristine fitted white shirt and a Clare Vivier clutch and you’re ready for brunch in Notting Hill. Two of my fav fashion sites Coggles and My-Wardrobe have some great boyfriend jeans from Diesel and Maison Scotch. It’s a look that Mandy from Hush Homewear wears very well here and Olivia Palermo too here with flat shoes and a white blazer. Sadly, flat pumps don’t really work on my short and curvy figure but what works perfectly, is the pair of leopard printed stilettos I got in the Zara sale (here on IG). I think they’re all sold out now but Debenhams and La Redoute have a decent collection in the sale. 3 useful links for you…**Fashion: My favourite look by far…option white t-shirt for the beach + pretty necklaces**Food: Steve and I had lunch at Granger & Co last Saturday in Notting Hill. It’s one of the restaurants own by Australian Chef Bill Granger. The interior design is not groundbreaking but the food is good, healthy and tasty.**Fitness: Get yours …

30-day Birkram Yoga challenge | DAY 3

How are you today!? Isn’t this weather just A-MA-ZING today!? It finally feels like Summer and a very good reason to push forward and keep focused on our goals so today is DAY 3 of my challenge and my body is feeling VERY stiff.I was told today by my yoga teacher that it was normal and that I should see my 30-day challenge as a journey, without expectations (yeah right! If I don’t lose a bit of weight, I’m going to be well pissed off) but all I need to focus on tomorrow is to turn up to the class and can do that. While my body feels very stiff, my mind is very very focused so I’m going do this…day after day. This morning I got a direct message via Twitter from someone who was thanking me for inspiring her to start eating healthily and for kicking off her weight-loss to lose 2 stones and this really made me happyI have equal admiration for the women out there who have a super fit yoga body and the years …

Gwyneth, Quinoa, banana cake & the Kale project | FOOD

After being proud of myself for making all theses healthy changes to my diet without too much of a struggle (I actually felt my new way of eating was better and tastier), I was told yesterday that I had to leave dairy out for a while which really p$$&8*d me off.Luckily I received some great advices on Twitter (thanks Tina) and Instagram and managed to find some nice alternatives so I’m all set for this week before heading off to New-York (read comments here if you want more info on alternatives). To cheer myself up, I baked this gluten-free banana cake for the second time: 300 g (10  1/2  oz)  smashed ripe banana3 free range / organic eggs60 g ( 2 oz / 2 tablespoons) raw honey or organic maple syrup1 teaspoon vanilla60 g (2 oz/  1/4 cup)  macadamia nut oil or cold pressed olive oilhalf teaspoon ground cinnamon1/2  tsp baking soda ( bicarb soda) + 1 tbsp lemon juice200 g ( 2 cups/ 7  oz) ) almond meal (I still don’t have almond meal in my panty so I’ve …

Awesome spicy prawn salad | Healthy eating

Yesterday Francois & I was styled & photographed a collection of prints for a client in my home so I made sure we had a healthy, filling salad at lunch time.Once recipe I have been doing for a long time (long before embarking on this healthy eating journey) was the Spicy prawn salad by Michele Cranston from her Seasonal Kitchen book. Her book and Donna Hay’s Seasons are by far my two favourite cooking books (the styling in Donna’s book is amazing) and as general rule, I’m much prefer the relaxed approach of Australian Chefs than French Chefs. I’m not much of a cook and for me, cooking is all about entertaining, having friends and enjoying good foods so I like it when it’s all relaxed, easy to make and super yummy.Oh and I almost forgot!! Here is an example of how I use cotton bags to store Mila’s things as mentioned in my post yesterday.{Spicy Prawn Salad recipe}20 cooked prawns (shrimp), peeled and deveined1 large red chilli, seeded and finely chopped (this is too hot for me so I …
