How to make a healthy winter soup for the whole week

I have meant to share this recipe with you for ages because it’s super easy, quick and inexpensive but I wanted to use one of my photos rather than one from my food styling board on Pinterest. I have to admit that, while this soup only takes 5 min prep, getting my shot ready took waaayy much longer time. I had Ikea white bowls from the 365+ series for the past ten years and I’m slowly changing everything for something a bit more organic with a handmade feel. These have a few flaws and were really inexpensive but they give me a great deal of pleasure just by using them on a daily basis.How to make a healthy winter soup for the whole weekHow to make a healthy winter soup for the whole weekEnough talking, let’s make this healthy soup for the winter!

Number of people: 4 | Prep time: 5 minutes | Cooking time: 45 min

  • 1 x leek
  • 3 courgettes
  • 3 carrots
  • 2 stock cubes (chicken or vegetables)
  • 1.5 litre of water


  • Pour 1.5 litre of water in a large stockpot and add two stock cubes (I like these organic chicken cubes)
  • Slice all your carrots first and drop them in the stockpot (they will take longer to cook than the other veggies) and then slice the other vegetables to add them too
  • Reduce heat, cover the pot and leave it on the hob for 45 min
  • Once all the vegetable feels soft, mix them with a hand blender and store in the fridge if you’re not quite yet ready to have a bowl.
  • If ready, add your favourite spices, salt & pepper and a small spoon of creme fraiche.

I usually double the quantity above and make a bit batch on Monday for the whole week so I can have a small bowl each evening with a bit of rice as advised by my Nutritionist. You can add any vegetable you like and if you have some salad that looks a bit off, you can add it too. These vegetables are really inexpensive so you can easily make a big batch of soup for less than £3. Voilà! I hope you like it.
